About Us - La Cave, Pascal & friends
Now with La Cave du Baratin, We're excited to share our love of French wines beyond the walls of the restaurant. There are so many regions producing beautiful wines – the choice and diversity is wonderful and we can’t wait to bring it to you! With wine, comes food – please remember that you MUST order food when you place your wine order. This is a requirement of the AGCO that we all must comply with. And fortunately, we have an offering of French food favourites – from our homemade pate and rillettes, to treats from our home country like stuffed olives, chestnut spread and more.
With over 30 years in the hospitality and restaurant industry, creating authentic experiences with great food and wine is literally in the fabric of my being. My passion for developing great wine collections was first realized while I was living in Burgundy, working as the F&B Manager at Chateau de Chailly. There I built a wine list of over 300 references. When I decided to move from Burgundy and Château de Chailly, I left behind a wine inventory of 20,000 bottles, in search of new adventure and learning as a vinophile. After living and working in a few different countries and expanding my experience, I then decided to move to Canada and settle in Toronto.
For a time, I worked in Niagara-on the-Lake while that region was enjoying an exceptional period of growth in the industry. Then it was onto downtown Toronto with stints in both hospitality and restaurants before I opened my first French restaurant, MIDI Bistro in 2003. After selling MIDI Bistro, I then started into Le Baratin with my partner & Chef, Jean Regis Raynaud. And, with our great team we’ve been serving an authentic French bistro experience from our Brockton Village location since 2016.
Pascal at a Glance:
My best memory: testing La Tache 1959 at the Domaine de la Romanée-Conti; unique.
My favorite wine: pretty much all of them with a "coup de coeur" for Haut-Médoc.
My best bet these days: wines from Languedoc-Rousillon as they're the best value for price.
My best move : settling down in Toronto 20 years ago!
